Cognac is a wine spirit with a protected designation of origin (AOC), made from white grapes grown exclusively within the delimited Cognac area. The grapes are first made into wine, which is then distilled in traditional Charentais copper stills. The resulting eau-de-vie is aged in oak for a minimum of two years. Its production rules are strictly defined in the specifications of the Cognac AOC (decree 2015-10 of 7 January 2015).
